Winter Roast Chicken
Prep and clean up 15 to 20 minute / Cook time 1 hr 15 min.
Start with a 4 to 5 pound LL Pittenger Farms 8-Piece Cut-Up Chicken.
Pre heat oven to 350 degrees.
Dry season or sauce up both sides of the chicken a place in a roasting pan.
Put 2 to 4 oz. of liquid in roasting pan (water, beer, apple cider or orange juice — anything you have available).
Cover pan tightly with aluminum foil.
Place covered chicken into oven for 25 minutes.
Then remove aluminum foil and cook for 25 minutes more.
After a total of 50 minutes, turn on the convection switch on your oven and cook the uncovered chicken for the 25 minutes more and that will finish cooking the chicken and brown up the skin.
Let stand for 5 minutes and serve.
